Our signature Tonkotsu broth crafted from pork bones and simmered for 14 hours.
A combination of freshly made wheat noodles, choice of taré, and various toppings.

Shio

Appreciate our Tonkotsu in its purest and most faithful form. A true classic in savory salt-based tare.

Shoyu

Flavorful and brimming with umami, yet light on the palate. Shoyu is soy sauce-based and has a bolder flavor than Shio. Our most popular dish!

TanTanMen

Sesame paste with ground pork cooked in chilis and finished with a drizzle of chili oil. Creamy, nutty and delicate, bold and spicy, all in one bite.

Miso

Blended with seven different kinds of miso, this soup is rich, complex, and flavorful. *Requires a little more preparation time, but worth it!

TSUKEMEN

つけ麺

A style created by one of our chefs, Kazuo Yamagishi.
Chilled thicker noodles are served with a savory dipping broth.
*Separating the noodles from the broth allows for each bite to be as bright and fresh as the first.

Gyokai

Tokusei

A flavorful stock made from kelp, skipjack tuna flakes, and dried mackerel mixed with our Tonkotsu broth. Served with ground pork, sliced chashu, and a half portion of aji tamago.

Karai Tokusei

A spicy version of our Tokusei. A miso base and several types of chilis are just a few of the 24 ingredients that this dish is made with. Fiery and complex!

MAZE SOBA

まぜそば

Noodles dressed with seasoning (in place of soup),

topped with a variety of ingredients and a raw egg yolk.

Shio Maze Soba

Served with shio taré, noodles, steamed chicken breast slices, sesame seeds, bean sprouts, and a lemon wedge.

Shoyu Maze Soba

Featuring our signature shoyu taré. Served with noodles, cabbage, shredded chashu, minced garlic, bean sprouts, and pork back fat.

Karai Maze Soba

Topped with a heaping portion of assorted chilis and spices. Sharing ingredients with Shoyu Maze Soba, but with no pork back fat. *Warning: Very spicy.

Choose your level of spiciness from 1 (mild) to 5 (extreme).

Hiyashi Chuka

Our Hiyashi Chuka is a cold ramen topped with various types of meat, seafood, and vegetables. Served with a sesame, and shoyu dressing and mustard.

NO TAKE OUT FOR COOKED RAMEN & GYOZA. Temperature plays a huge role in your ramen experience. It’s at its best the moment it’s served! | CHOPSTICKS AND SPOONS ONLY. We encourage guests to have a genuine dining experience.

Hiyashi TanTanMen

Sesame paste, vinaigrette, and chicken stock in a cold broth. Topped with your choice of spicy ground pork, chicken and kani, or grilled tofu.

Gyoza

A traditional Japanese pork dumpling, pan fried on one side, steamed on the other. Made with a complex blend of seasonings, pork, and vegetables. Our wrappers are made fresh daily!
